Recipe : Bhel Makai Ka

Ingredients :
3 teacups cooked corn
4 boiled potatoes
2 onions
chopped2 tomatoes
chopped6 green chillies
chopped1 tsp jeera
4 tbsp coriander
chopped a pinch asafoetida
juice of 2 lemons
6 tbsp oil
4 tsp sugar
salt to taste
For decoration :
1 teacup sev,
4 tbsp chopped coriander
½ grated fresh coconut

Method :
1.Boil the corncobs in a pressure cooker until the corn becomes tender.
2.Take out the corn from the cobs using a sharp knife.
3.Chop the potatoes into small cubes.
4.In a broad vessel, heat the oil and jeera.
5.Put the onions, tomatoes and asafoetida and sauté for a few minutes. Put the corn, potatoes, green chillies, coriander, lemon juice, sugar and salt.
6. Cook for a few minutes.

How to serve :
Spread the bhel in a serving dish.
Decorate with the sev, coriander and grated coconut.
Ready to serve hot.

Recipe : Bread Balls

Ingredients :
4 potatoes
1 carrot
½ cup green peas
1 onion
4-5 hot pepper
chopped Juice from one fresh lemon
¼ tsp grated ginger
20 slices of brown bread
Oil for frying
Salt to taste
Chopped coriander

Method :
1.Boil Potatoes, remove skin and mash them coarsely.
2. Chop carrots fine and cook (Microwave) it along with green peas till tender. Mix together. 3.Chop onion and hot pepper fine.
4.Heat little oil and saute till the former is transparent and then add hot pepper and ginger. 5.Remove from fire; add this to the potato mixture along with, coriander, salt and lemon juice. 6.Mix well and make 20 small lime size balls. Keep them aside.
7.Keep a plate of water ready and barely dip the ends of bread slice on both sides.
8. Press it between your palms and squeeze the excess water out without spoiling the shape of bread slice.
9.Now place a potato ball inside and fold the bread over and press it like you make a snowball. 10.Do the same with all bread slices. Deep fry a few at a time.

Recipe : Aloo Tikki

Ingredients :
4 potatoes(aloo)
4 green chillies
A handful fried peanuts
Salt to taste
1 onion
¼ cup oil

Method :
1.Chop the onion into fine pieces.
2. Boil potatoes peel the skin off & mash it.
3.Add this to the onion along with chopped green chillies salt & lightly powdered peanuts.
4.Mix all this and make small balls from these & press each of them lightly to form a circular shape.
5.Sprinkle oil on tava, add these tikkis to it, sprinkle oil as desired and fry them on the tava.

Recipe : Banana Ice- Cream

Ingredients :
6 bananas
2 litres milk
4 tbsp sugar
2 eggs

Method :
1.Boil milk on low flame till it becomes thick.
2. Remove it and cool.
3. Peal off bananas and smash them.
4.Add sugar, little milk and grind them in the mixture.
5. Beat eggs and mix it add banana shake into thickened milk.
6.Mix well.
7.Refrigerate it in a bowl for 5 to 6 hours or till it is set.

Recipe : Chatpati Salad

Ingredients :
2 no cucumber
2 no tomatoes
6 no carrots
1 medium onion
½ bunch cilantro
2 small green chillies
5 peanut bhujiya
chat masala
Salt to taste
Cheese cubes

Method :
1.Cut Cucumbers, Tomatoes into small pieces, chop Carrots, Onions, Cilantro very finely and ground the green chillies.
2.Mix all the above Vegetable together and refrigerate and just before serving add the remaining ingredients.

Recipe : Coconut Burfi

Ingredients :
3 cups coconut gratings
3 cups sugar
4 tsp ghee
3 cardamom pods
15 cashewnuts

Method :
1.Grind coconut gratings with cashewnut bits, without adding water.
2.Mix sugar with ½ cup of water in a vessel and heat till syrup is formed that can be drawn into strings.
3.Add the ground mixture to the syrup and turn over constantly till the blend thickens a bit. 4.Then add 2 tsps ghee and continue turning over till it forms a lump.
5.Remove from flame.Flatten the blend on a wooden board, smeared with ghee, evenly to ¾" thickness.
6.Cut into pieces of desired size of square/diamond shape, using a spatula (or dosa lifter), when still warm.
7.Separate the pieces and store in a container, when cool.

Recipe:Green Peas Pakora

Ingredients :
1 cup flour (maida)
½ cup wheat flour (atta)
1 tbsp oil
½ cup green peas
1" ginger-paste
1 tbsp aniseeds paste (saunf in hindi)
4 green chilies paste
oil salt to taste

Method :
1.Heat oil in a pan; add the ginger paste, chili paste and the aniseed paste.
2.Fry this mixture for 2 minutes, then add the green peas and salt.
3. Cook this for 5 minutes then allow it to cool.
4.Next, you grind the peas mixture in a blender.
5. Mix together wheat flour, flour, oil and salt, adding water until you form a smooth dough. 6.Take a small ball of dough and roll it out, place little filling in the center and close to form a pouch. Roll this out and fry like pooris or like parathas.

Recipe:Apple Pie

Ingredients :
For pastry:
white flour 200 gms
baking powder 1 tbs
salt to taste
oil / ghee for deep frying
apple 2 nos
sugar 1 cup
cinamon powder 1 tbs

Method:
1.De seed Apples & chop them into small pieces.
2.Heat a pan add the chopped apples & sugar, cook till the sugar dissolves & apples
become tender.
3.Check if more sugar is need because the apples might be sour.
4.Add cinnamon powder & mix, take out & keep aside.
5.Add a little ghee/oil to the flour, baking powder & salt.
6.Kneed it to soft pliable dough adding water.
7.Roll the dough into small squares , add spoonful of the apple mix in the center, seal the
edges with little water.
8.U can also shape in the gujiya mould.
9.In heavy bottomed pan heat oil , fry on a low fire till crispy& done.

Recipe:Apple Sauce

Ingredients:
10 large firm apples
1/2 cup water
1 lemon juice extracted
1/2 tsp. lemon rind finely grated
1/2 cup sugar
3-4 pinches nutmeg finely grated
3-4 pinches cinnamon

Method:
1.Peel, core, dice and apples. Combine apples, water and lemon rind in a large saucepan.
2.Simmer, uncovered for 10 minutes. Mixture should be mushy with few chunks of apples
left.
3.Add sugar and allow to melt while simmering on slow. When sugar is melted add
cinnamon, nutmeg and lemon juice.
4.Watch closely and stir often to prevent burning. Applesauce should be thick, not watery.
5.Check with plate or other test (refer jams, preserves,) .Serve warm or chilled.

Note:
Sugar quantity may be increased or decreased depending on the variety of apples used:
If apples are very sweet decrease sugar and if sour then increase a little.

Recipe:Ripe Mango Toasted Sandwiches

Ingredients:
2 ripe alphonso mangoes
6 large slices sandwich bread or wheat bread
1 tbsp. butter

Method:
1.Cool mango in refrigerator before using.
2.Peel and cut into oval slices as big as possible.
3.Keep slices at least 1/2 cm. thick.
4,Discard stones.
5.Use the side titbits also to fill up sandwich.
6.Prepare crisp toasts of bread in toaster or oven.
7.Butter all slices on one side generously.
8.Place mango slices to cover full bread slice on butter side.
9.Repeat for 2 more slices.
10.Cover all three slices with remaining buttered slices.
11.Check to keep the buttered side facing mango.
12.Cut into triangles, serve hot and crisp with a cold drink or a hot beverage.

Recipe: Tortilla Rolls

Ingredients:
buy 1 doz. tortilla (any brand with no lard) from the super market.
1 pkg. philladelphia cream cheese - 8 oz - room temperature.
3 to 4 pickled jalapeno - finely chopped (optional).
1 medium size tomato - finely chopped (optional).

Method:
1.Warm up tortilla in the pan which will help you to roll them easily.
2.Mix all other ingredients. Spread the mixture on the tortilla then roll them.
3.Cut the rolls in 2 to 2 1/2 centimeter size.
4.Arrange them in the plate and serve by itself or with hot salsa (hot sauce can be made at
home or buy them in the jar).

Recipe:Vegetable Burgers

Ingredients:
4 potatoes, boiled and peeled
1/4 cup peas
10 french beans, finely chopped
2 carrots, finely chopped
1/2 cup small cauliflower florets
1 tsp lemon juice
1 egg white
1-1/2 bread crumbs
1 tbsp cornflour
4 green chillies chopped finely
1/2 tsp turmeric powder
1/2 tsp garam masala
1/4 tsp ginger paste
1/2 cup chopped coriander leaves
salt as per taste
oil for shallow frying

Method:
1.Boil peas, french beans, carrots and cauliflower .
2.Smash it coarsely .
3.Smash potatoes .
4.Mix all the ingredients except for the oil .
5.Make patties of the mixture .
6.Heat oil in a shallow pan .
7.Fry patties on both the sides till golden .
8.Serve on toasted roll spread with chutney .

Recipe:Meat Burgers

Ingredients :
1/2 kg lean lamb mince
1 onion, minced
1/2 tsp garlic paste
2 green chillies, minced
1/4 tsp ginger paste
salt as per tast

Method :
1.Mix all the ingredients except sesame seeds and oregano
2.Shape into patties of your own choice
3.Sprinkle sesame seeds and oregano on it
4.Preheat grill or broiler
5.Grill the patties on medium flame (both the sides)
6.Serve with shredded lettuce leaves, raw vegetables .

Recipe:Khasta Kachod

Ingredients:
moong dal-200 gms
maida- 250 gms
garam masala-1 tea spoon
haldi (turmeric)-1/2 tea spoon
red chilly powder-1 tea spoon
dhania powder-2 tea spoon
salt to taste
oil

Method:
1.Soak moong dal for 2 hrs and then grind it into semi solid paste.
2.Put around 5 to 6 teaspoon of oil in pan and start frying the paste in it over slow flame
3.keep doing it till it becomes golden brown and solidifies into small spherical shaped
mixture.
4.Grind it into fine powder and to this add all the above masala and salt to taste.
5.To the maida add around 5 teaspoon of oil (to soften the maida) and salt and mix it well
and then make it into soft dough using lukewarm water.
6. Roll this maida dough into small circles and fill the mixture in it, seal it and roll it again lightly and fry it in oil till it is light brown and serve it hot with sweet Tamarind Chutney or Tomato Sauce.

Recipe:Apple Tokku

Ingredients:
3 granny smith apples.
1/2 spoon powdered roasted methi (fenugreek)
3 tbsp oil
pinch turmeric
1 tsp salt
1 tsp red chilly powder
1/4 tsp mustard seeds
pinch of hing (asafoetida)

Method:
1.Chop apples in to small pieces.
2.Heat oil in a thick bottom pan. Add mustard seeds while popping, add hing and turmeric.
3.Add the apple to the mixture.
4.Occasionally stir; when half cooked add salt; let it cook some more.
5.Add the red chilly powder and methi powder. Cook until the apple pieces almost
disintegrate.

Recipe:Apple Crisp

Ingredients :

preheat the oven to 375 degrees.

Method:
1.Then, peel, core and slice the apples. Put the apples in a bowl and mix in 1/2 cup brown
sugar.
2.In a separate bowl, using a fork, mix together 1 cup flour, 3/4 cup sugar, 1 teaspoon
cinnamon, and 1/4 teaspoon salt.
3.In another bowl beat together 1 egg, 2 tablespoons melted butter and 1/2 cup water. Add
them to the dry ingredients.
4.You've now made the topping. Put the apples in baking dish and pour the topping over
them.
5.Bake in the oven for 30 - 40 minutes. When it's done the apples should be soft and the
topping golden and crisp.

Recipe: CoconutCutlets

Ingredients :
1 cup coconut scrapped fine
3 potatoes, boiled, peeled, mashed
4 green chillies finely chopped
1" piece ginger grated finely
salt to taste
1 tbsp. cornflour
1/4 cup bread crumbs
2 tbsp. desiccated coconut powder
oil to deep fry

Method:
1.Mix coconut, potatoes, chillies, ginger, salt, cornflour.
2.Knead to make a pliable dough.
3.Divide into ten-twelve parts, shaping each into a cutlet.
4.Mix breadcrumbs and coconut powder in a plate.
5.Roll each cutlet in crumb mixture.
6.Place in refrigerator till required or 10 minutes at least.
7.Heat oil in a frying pan, gently drop in a few cutlets, when oil is hot.
8.Fry on medium flame till golden brown, flip sides.
9.Fry other side evenly, drain.
Place on kitchen paper for a few minutes to drain excess oil.
Serve hot with green and tamarind chutneys or tomato ketchup.

Recipe:CornCutlets

Ingredients:
fresh soft maize (grated)
1 tablespoon gram flour (besan)
1 tablespoon rava
1 cup boiled peas
1 teaspoon ginger paste or grated ginger
2 green chillies finely chopped
2 teaspoon finely chopped coriander
1 lime juice
chat masala or garam masala

For frying:
refined vegetable oil
2 table spoon rava
1 teaspoon roasted sesame seeds

Method:
1.Take grated maize (this will be like a paste with some juice try to take thick portion of this
and take off juice with the help of spoon and by pressing the thick portion)
2.Put the thick portion of grated maze in a hollow big bowl, add gram flour, rava, ginger
paste, boiled peas without water, chopped chillies and coriander, salt, lime juice and chat
masala or garam masala if you like.
3.Mix this mixture well keep this mixture in refrigerator for 1/2 hour to set.
4.Take out the mixture out of fridge and see if the mixture is very loose and you find difficult
to make shapes then add some more rava till you are comfortable but let this mixture not
be very tight. If you have followed the instruction well this problem will not arise.
5.Heat the oil in frying pan.
6.Take a plate and spread thick layer of rava and sesame seeds over it. Make flat oval
shapes of the batter and put it on this plate. Try to wrap the rava and sesame seeds all
over the shape and put in the heated oil carefully for deep frying.
Let the cutlets be brown on slow flame in heated oil.
Take out the cutlets over blotting paper.

Recipe:Mango Pulisheri

Ingredients:
mango ( ripe) : 1 count
ginger : 2 tsp
onion : 3 tbsp
turmeric powder : 1/2 tsp
curd : 4 tbsp
coconut (grated) : 1 cup
dry chillies : 5 count
curry leaves : 4 -5
mustard : 2 tsp
oil : 3 tsp

Method:
1.Cut mangoes into medium size pieces.
2.Put the cut onions, ginger, turmeric powder and enough salt to the mangoes and boil it
until the mangoes are fully cooked.
3.Then grind the grated coconut along with the curd.
4.Add this to the cooked mangoes.
5.Heat oil in some pan and add mustard, dry chillies and curry leaves.
6.Then add the mixture to the pan and simmer for 30 sec.
7.Ur mango pulisheri is ready to be served.

Recipe:MonacoCheeseRolls

Ingredients:
1/2 cup paneer
1 cup crushed monaco biscuits
1/2 cup milk
1 tbsp flour
1 chopped onion
6-8 cashewnuts
1 tbsp butter
salt, pepper & chilli powder to taste
extra monaco crumbs.
Method:
1.Fry flour, onion & chopped nuts. Add milk & stir till thick.
2.Remove from fire & blend in paneer, salt, pepper chilli powder & monaco crumbs.
3.Mix well & keep for 1 hr in fridge.
4.Shape 10-12 rolls. Roll in extra crumbs & fry till done.

Recipe:PotatoRolls

Ingredients:
For Masala :
potatoes- 1/2 kg
finely cut onions - 3 tbsp
chopped coriander leaves - 2 tsps
ginger garlic paste 1 tbsp
green chillies -3
turmeric powder -1/2 tsp
red chilli powder-1 tbsp
salt to taste
oil for frying
maida -1 cup
fine rawa - 1/2 cup
oil - 4 tsp
salt-1/2 tsp

Method :
1.Mix maida, rawa, oil and salt in a basin and make a smooth dough.
2.Cook the potatoes and smash coarsely and add the other ingredients and mix well.
3.Make medium sized balls & rollouts like chappathis and place the filling lengthwise on that
at one corner leaving little gap behind gently roll from that corner to other end.
4.Seal with maida paste at that end & sides of the roll & deep fry till crisp & golden brown.
5.Serve hot with Tomato Ketchup.

Recipe:Pineapple Fluff

Ingredients:
whipped cream--8 oz
sour cream--16-20 oz
crushed pineapple--20 oz
condensed milk--14 oz

Method:
1.Mix sour cream & condensed milk, then add crushed pineapple & whipped cream.
2.Mix well. Set in refrigerator for 1/2 hour before serving.
3.Garnish with any or all....black grapes, raisins, currants, cherries, nuts......!!!!
4.Store in refrigerator & consume within two days.

Recipe:Banana Oatmeal Cookies

Ingredients:
3 bananas
1/3 cup salad oil
2 cups oatmeal (quick cook)
1-1/2 cups chopped dates
1/2 cup chopped walnuts or pecans
1 tsp. vanilla
3/4 tsp. salt

Method:
1.Mash bananas. In large bowl add all the remaining ingredients.
2.Drop by rounded Tablespoons on ungreased cookie sheet.
3.Bake at 375 F for 20-25 minutes or until done.
4.Makes 30.

Ingredients :
8 large cabbage leaves parboiled for 5mins. & drained
2 medium onions chopped
1 cup paneer
turmeric & chilli powder
1/2tsp. garam masala
1-2 green chillies chopped
coriander leaves
string for tying rolls
oil.

Method:
1.Heat 3tsp. of oil & fry onions till brown
2.Add paneer,turmeric & chilli powder, garam masala, green chillies, salt, coriander leaves
& fry for 5-6mins.
3.Place a 2tsp. of mixture on a cabbage leaf and roll up, folding two sides in.
4.Tie with a string. Heat oil and fry the rolls turning once.

Ingredients
8 large cabbage leaves parboiled for 5mins. & drained
2 medium onions chopped
1 cup paneer
turmeric & chilli powder
1/2tsp. garam masala
1-2 green chillies chopped
coriander leaves
string for tying rolls
oil.
Method
Heat 3tsp. of oil & fry onions till brown
Add paneer,turmeric & chilli powder, garam masala, green chillies, salt, coriander leaves
& fry for 5-6mins.
